Quietly, precisely.
The place
Sushi Sho is a Melbourne restaurant centred on sushi kaiseki and chef-led omakase. Its approach combines Japanese culinary tradition with Australian produce, allowing the seasons to guide the menu. The meal progresses through individual courses, moving from kaiseki-inspired dishes into sushi prepared and served by the chef. Counter seating keeps that exchange between kitchen and guest at the centre of the experience. Rather than presenting sushi as a single moment, the restaurant places it within a broader sequence of ingredients and preparations. The result is an intimate dining format shaped by seasonality, attention to ingredients and direct service.
Through the lens
A finished plate and the quiet of the room set the pace. Closer frames follow ingredients, tools, hands and small finishing gestures, connecting the food served at the counter with its preparation.
